Makes 2 sandwiches:

🌱 2 medium uncooked beetroot
🌱 1 tsp black peppercorns, freshly floor (see notes)
🌱 1 tsp yellow mustard seeds, freshly floor
🌱 1/2 tsp floor coriander
🌱 1 tsp smoked paprika
🌱 1/2 tsp garlic powder
🌱 salt
🌱 olive oil
🌱 4 thick slices of bread
🌱 160g (1 cup) sauerkraut, see notes
🌱 8 lettuce leaves, we use butterhead

For the tofu mayo:
🌱 300g (10.6oz) silken tofu
🌱 1/2 lemon, juice solely
🌱 1/2 tsp Dijon mustard, plus additional for serving
🌱 1/2 tsp maple syrup

Slice the highest and tail off the beetroot (go away the skins on), then add them to a big saucepan. Fill the saucepan with chilly water till the beetroot are utterly submerged, then shortly deliver to a boil. Proceed to boil for half-hour, then drain.

Preheat the oven to 200°C fan / 425°F and line a small baking tray with baking paper.
