Enoki Tofu Rolls
Substances:
400g enoki mushrooms
2 blocks silken tofu (thawed and pressed after freezing)
2-3 nori sheets
salt and pepper to style
1 tbsp olive oil
Sauce:
1 tbsp olive oil
3 cloves garlic
1/2 white onion
300ml mushroom inventory
1/8 cup low sodium soy sauce
1 tbsp coconut sugar
salt and pepper to style
slurry (1/4 cup water + 2 tbsp cornstarch)
garnish with coriander and sesame seeds
